The flagship Chardonnay of Elephant Hill The Salomé Chardonnay is named after a famous ancestor of the Weiss family. Maria Salomé Ebner von Eschenbach. She had been married since 1717 to Carl Wilhelm Ebner, the castellan of the city of Gostenhof near Nuremberg The grapes come 100 percent from the coastal Te Awanga vineyard. The 2016/17 growing season was marked by strong weather changes towards the end of summer and a sudden increase in rainfall. Hand-picking ensured that only the best grape material was harvested. After whole grape pressing, the must was fermented in barrels and the wine was then aged for 12 months in French oak barrels, one third in new barrels. Biological acid degradation was minimal. The Salomé 2017 reflects a cooler vintage with higher natural acidity. And this is how the Salomé Chardonnay from Elephant Hill tastes The Salomé Chardonnay shows beautiful aromas of white stone fruit, pear, honeydew melon and citrus, accompanied by nutty and roasted aromas. On the palate it is very balanced, complex and concentrated. A lot of lush fruit and creamy enamel are well supported by the delicate acidity and salty minerality. A sumptuous and at the same time refined wine, with a good drinking flow and a long citrus finish.
