Season generously with quality sea salt (Murray River Salt Flakes recommended). Heat your BBQ or pan until smoking hot. The steak should sizzle when it hits the grill. For a classic black ’n’ blue finish — charred outside, rare inside — cook for about 6 minutes per side. Turn the steak once only when moisture beads on the surface. Rest the steak for at least 25 % of the cook time before serving. Avoid overcooking to preserve its signature tenderness and juiciness.
